On the seventh day of Spring Break…

…I drank coffee all morning, went to Easter service, then whipped up brunch!

Yukon Golds sliced 1/8 in. thin with my new Oxo mandoline.  The finished product?

Potato Galette…served with baked ham, steamed asparagus, corn pudding and whole grain rolls (yum)!
